Queijo da Serra da Canastra

Os queijos mineiros para o festival do Tordesilhas
Uma "puta" sexta-feira, depois de uma semana super tensa, estava voltando do trabalho quando recebo uma ligação da Bia (Beatriz Buéssio) me convidando para o Festival do Queijo da Serra da Canastra.


Chegamos e fomos recebidas com esta queijeira rústica com 6 tipos de queijos distintos, cada um de um produtor. Alguns mais envelhecidos, outros com processo de cura diferente... e também experimentamos uma cachacinha!

GANHEI UMA FULL TUTION NO LE CORDON BLEU AUSTRÁLIA!!!!

Fui almoçar com um amigo do trabalho e ansiosa pelo resultado da bolsa do Le Cordon Bleu, obviamente foi o tema do almoço. Ele me perguntou como eu descobri esse esquema de bolsa... daí comentei com ele que pouquíssimas pessoas no Brasil sabem sobre esses programas, e daí eu fui então resgatar como foi que isso chegou até mim.

No dia 2 de fevereiro de 2011, eu enviei um email ao Le Cordon Bleu de Londres perguntando se havia algum programa de bolsa e então a resposta veio com a indicação do The Culinary Trust e The James Beard Foundation. Naquele momento eu não podia me inscrever, o tempo de “application” estava aberto, mas eu não estava preparada.

Um ano depois, em 13 de março de 2012 eu enviei meu application. No formato de inscrição online eu não poderia inserir as minhas fotos, então envei um email ao Heather, que trabalha no The Culinary Trust solicitando que incluísse no meu processo. Agora o material que preparei para este application foi muito especial, pois foi feito a muitas mãos, devo agradecer aqui especialmente a (sem ordenação): John Amacker, Papai, Letícia Avelar, Lygia César, Yolanda César, Roberta Batochio, Alexandre Henriques, Danilo Albuquerque, Julia Mori, Vitor Gramari, Caueh Perrella, Natasha, Juliana Tavares, Guilherme Bonifácio e todos os outros amigos queridos que leram a carta e contribuíram dando apoio e incentivando o tempo todo!


No domingo dia 20 de maio eu recebi um email de Jessica Bride do The Culinary Trust dizendo que eu era uma das finalistas que eles gostariam de fazer uma entrevista de 15-20 minutos. Ela marcou a entrevista para o dia seguinte, dia 21 entre 8 e 11 da manhã do horário dela.

Imagine se eu dormi esta noite? Hahaha piada, cabeça a milhão pensando tudo que ela poderia me perguntar! Dei um google no fuso horário, eram duas horas mais tarde que no Brasil mas eu nervosa confundi tudo e fui para o escritório as 6 horas da manhã! Fiquei conectada no Skype direto de 6 até 14:30hrs quando conseguimos nos falar! A entrevista foi ótima! Consegui me expressar, claro que no começo estava nervosa, gaguejei um pouco no começo porque estava nervosa e passou... coloquei minha opinião de forma clara e sincera.

Ela me perguntou tudo! Vou tentar registrar aqui porque um dia eu vou esquecer, e é uma boa lembrança:
Você tem fundos para cobrir os custos de vida na Austrália e também comprar equipamentos e uniformes?
Você está trabalhando atualmente com cozinha?
Minha resposta: Não, sou engenheira, estou me preparando financeiramente para arcar justamente com os custos de cursar o Le Cordon Bleu.
Por que você escolheu Austrália?
Minha resposta: Por ser um país parecido com o Brasil em clima e pessoas, achei que seria mais fácil me adaptar. E também porque há duas oportunidades de trabalho incríveis que gostaria de aplicar, uma delas é do Jamie Oliver com obesos que acontece justamente no mesmo campus onde são ministradas aulas do Le Cordon Bleu e a outra é com o Gordon Ramsay, ele recentemente abriu um restaurante em Sydney e está precisando de equipe, gostaria de fazer parte do time dele.

Como você pretende aplicar o conhecimento do Le Cordon Bleu?
Acredito que precise aprender as técnicas francesas para aplicar nos ingredientes brasileiros. Temos carnes frescas e não sabemos prepara-la corretamente porque desconhecemos as técnicas. Além da grande riqueza de ingredientes que temos ainda por descobrir, conhecendo as técnicas básicas de culinária eu acredito que possa contribuir na descoberta de novos produtos da gastronomia brasileira.

Por que o Le Cordon Bleu?
Minha resposta: Porque é a melhor e mais conceituada escola do mundo em gastronomia, somente nela poderei aprender as técnicas corretas para aplicar nos ingredientes brasileiros.
E qual a diferença entre sua carreira em engenharia e culinária?
Minha resposta: “Passion,  engineer carrer is not for love” A comida tem um peso inacreditável na minha vida, comecei a preparar jantares em casa para nossa família quando eu tinha 7 anos de idade, alguns anos depois quando minha mãe se foi, o fato de eu cozinhar nos uniu novamente, proporcionando momentos de alegria em volta de uma boa comida. E eu acredito que tenha um dom e eu “devo” uma gratidão aos alimentos pela importância que tem na minha vida, quero transformar a maneira com que os brasileiros vêem o fato de cozinhar.

Daí ela perguntou se eu tinha dúvidas e esclareceu, descobri que sou a única brasileira entre 4 finalistas e ela ainda me disse que eu tinha o perfil que eles geralmente buscavam, me desejava sorte!
E assim... o resultado sairia na 4ª feira, dia 23/05, passei o dia grudada no skype e no celular! É o meu sonho se realizando!

O resultado saiu a uma hora, às 19:30h e eu estava no trânsito, chovendo emputecida e de repente eu resolvo dar uma olhadinha no site pelo Iphone. Nesse momento penso como vale a pena mil vezes ter um Iphone e ler esta notícia em minhas mãos ali parada no transito!!!!

REFERENCE LETTER 2

First of all, I would like to mention my background and to emphasize that occasionally I have the pleasure of writing a letter of recommendation for exceptional cookers, and thus I do so now on behalf of Adriana Marquez de Avelar.
I have such a long kitchen experience, had started my carrier with 17 years old at Ilha da Madeira in Portugal and then I had worked with a known chef, accompanying him on Hotel’s kitchen start ups around the world: Canadá, United Arab Emirates, Spain, France and Italia. Then in 1997 I’ve moved to Paris, work at Hotel Plaza Athéné with Chef Alain Ducasse. I’ve started as a cooker, without say a word in French then, two years later I became a sous-chef. After 8 years I came back to Brazil and worked in Ouro Minas hotel chain. Now I am the head chef of Oliva Restaurant, which is the only restaurant of Hotel Presidente, the most luxurious hotel of the city of Uberlândia, whose kitchen is renowned from Guia 4 Rodas as the best restaurant of the city.
Uberlândia is located in the western part of Minas Gerais, in the region known as the Triângulo Mineiro, one of Brazil’s richest agricultural and livestock regions.
Among Brazilian states, Minas Gerais has the third largest economy, accounting for 9.1% of Brazil’s Gross Domestic Product. The Uberlândia metropolitan area comprises a consumer market of 3.5 million inhabitants and forms a link between the great urban centers of the coast and the hinterland of the country. At present 50 million people live within a 600-km radius of Uberlândia and help generate almost two thirds of Brazil’s GDP (about US$1,313 trillion, the equivalent of two Argentinean economies). Moreover, Uberlândia’s strategic location in Brazil’s central region provides it with an excellent logistics infrastructure, which in turn provides easy access to quality ingredients from all Brazilian regions.
Because of this dynamic economy and seeing a great opportunity, two (2) years ago I resigned from an important hotel chain in order to start promoting the culture and art of haute cuisine in Uberlândia. And it was precisely in this business that I met Adriana Avelar about a year ago, when she was a chef at Uai Tchê. Recognizing her as a potential star, I invited her to cook with me on some occasions. Wanting to deepen her knowledge of haute cuisine, Adriana soon asked to work with me full time, and of course I was very pleased to have such an excellent professional as part of my team at the Oliva Restaurant.
As the head chef in the kitchen, I worked closely with Adriana for 6 months. I say with total frankness that in my 25 years of kitchen experience, Adriana is the most talented young chef I’ve ever worked with. She began with me at night as a second cooker; however, some months later her supervisor informed me that she literally had nothing more to teach Adriana: in terms of knowledge and competence she had learned everything. Hearing this, I immediately transferred her to the breakfast and lunch shifts, as I had been looking for someone exceptional to take over those duties.
Adriana proved her mastery of various cooking styles, but equally important, showed that she had the leadership skills to make the kitchen and its staff of 4 people function perfectly. Thus, in a short time, Adriana became my right arm.
Besides that, she was never late for work, regularly volunteered to cover her coworkers' shifts and always took her job very seriously. As one can assume, it is rare to find a cook who sees beyond the seeming monotony of an entry-level job and has the work ethic to take it to the next level. I am fortunate to have had a skilled and dedicated professional like Adriana working in my kitchen. And since her personality and intellect must find expression in a number of areas, her decision to apply for admission to your Culinary School makes perfect sense. As a cooker I know how wonderful it is to work with interesting and dedicated people, those filled with ambition, hungry for knowledge, and striving for greatness. This is how I see Adriana.
This is exactly the right time for her to gain foreign experience, internationalize her résumé, and develop her natural talent. She has a gift for cooking, and practicing with perseverance and hard study will turn her into the superb cooker she is destined to be, ready to take over a great kitchen in Brazil when she gets back.
Therefore, for all of the above-mentioned reasons, I give Adriana my most enthusiastic recommendation and hope that you will consider favorably her application for admittance to your Culinary School.

Dear Sir or Madam,
I would like to share with you the context in which I met Adriana Marquez de Avelar, the person I had the pleasure of working with for six months and whom I hereby recommend for your Culinary School.
In January 2011, I asked Erika Mesquita – a dear colleage and owner of a renowned wine store inside the Uai Tchê Food Complex in the city of Uberlândia, State of Minas Gerais – to immediately hire someone to prepare a last minute dinner for 12 business executives scheduled at eight o’clock that night.
On this occasion, Erika instantly reminded me of Adriana, a young chef who had just arrived in the city and had already become one of our regular customers at the wine store. Erika then offered this job to Adriana at around 4 o’clock in the afternoon, and by six o’clock Adriana showed up at Uai Tchê, where we had the opportunity to meet each other.
She impressed me immediately, so I asked her to help me choose the dinner menu and also make all the necessary arrangements for the scheduled event.
The dinner Adriana prepared was ready at exactly eight p.m. and was superb in every respect: all the business executives were fully satisfied; in fact, they were enchanted by the flavor of the food from that charming young chef. The feedback confirmed my initial feeling of having found a unique professional.
At the end of that night I invited Adriana to accompany me to São Paulo on a business trip in order to help me acquire all the necessary kitchen equipment to assemble her workplace inside the kitchen of Uai Tchê. Adriana’s acceptance marked the beginning of our successful association.
Her duties varied from introducing the salon to new clients to managing all “backstage” procedures, such as planning and coordinating the services in dinner preparation, as well as supervising the buffet.
Other important responsibilities at Uai Tchê were as follows: (1) buy ingredients and prepare the “mise en place”; (2) deal with specialized kitchen equipment; (3) supervise the other members of the kitchen and food service team; (4) hire cook helpers; (5) discuss with colleagues the flow and quality of service; (6) care for the maintenance and hygiene of food preparation work area; (7) resolve issues related to shortage of food items, service mistakes and problems in the food-production budget.
In addition, Adriana played a crucial role in one of Uai Tchê’s most special dinners ever. In my open gourmet kitchen, she cooked for the world’s most famous soccer player: Pelé. On this occasion, Pelé, who had come to Uberlândia to take care of his sports businesses, invited to dinner at Uai Tchê the political and economic elite of the city, a group of approximately forty people. The event was a tremendous success – everyone was delighted by the quality and presentation of the dishes chosen and prepared by Adriana with the help of our staff that night.
Thus, from my experience with Adriana, I enthusiastically affirm that she is blessed with great culinary skill and creativity, along with the innate ability to make a kitchen work perfectly. I have no doubt that she possesses in abundance the necessary attributes to be part of your Culinary School.
